**** READ THIS PLEASE **** The vast majority of the questions I get can be answered "Don't believe your grill thermometer or meat thermometer unless it is a good digital." The cheap bi-metal thermometers that come on grills and smokers can be off by 50°F! Even the really cool looking ones. And most grill thermometers measure the temp near the lid, not the temp at the grate near the meat. There can be a 20°F difference from dome to grate. Also, for most meats you really really should use a good digital meat thermometer to prevent over or undercooking. As little as 5°F can be the diff between moist and tender or cardboard. Read my buying guide to thermometers and my meat temperature guide.

Yet another thing: I get a lot of emails asking what I think of this or that smoker, and which one should you buy. I have typed my fingers to the nub telling you just about everything I know about them in the Buyer's Guide, so there not much more I can tell you in an email.

2) Please read this article about thermometers. Chances are your thermometer is the problem! I cannot help you troubleshoot unless you tell me that you are using a digital oven thermometer at meat level (not in the lid), and/or a digital meat thermometer. You simply cannot believe your grill's built-in bi-metal dial thermometer. They are often off by as much as 50°F!

3) Please tell me everything I need to know to answer your question.

4) Please don't ask me "What grill (or smoker) should I buy?" Read my Buyer's Guides and follow the links. I've shared just about everything I know on those pages. I cannot pick the right cooker for you any more than you could pick the right car for me. But I've explained everything you need to know to make your decision.
