Recipe testing is the final step before I release a recipe to the public. I test it myself but of course I cannot anticipate everything. Especially all the grills and smokers in use out there. That's where you come in.
Your mission, should you chose to accept it:
Recipes now being tested and the deadline are listed elsewhere on this page. Print the recipe and the recipe tester's form and keep them handy when you cook. Make notes.
Read the recipe thoroughly before you start and attempt to follow it as closely as possible. If the recipe calls for fresh garlic, please don't use powdered garlic unless you have no choice. If it calls for an ingredient you can't find, drop me an email and I'll suggest a substitute.
Follow good cooking technique, especially mise en place and temperature control. For grilled or smoked recipes it is highly recommended that you have one good digital thermometer for your grill or smoker and another for the food.
When you're done, tell me what you think by filling out the recipe tester's form online. Keep in mind many of my fans are novices. I want most of my recipes to be easy enough for beginners, and still produce restaurant quality food. If you want to send pix of the result, that would be great but not necessary. A link to a page to upload pix will be shown to you when you complete the recipe tester's form.
