2019-04-16 New Stickers May Keep Fruit Fresh Longer

Most fruits are highly perishable. You buy some berries and before you get to finish them, they are getting soft, mushy, and covered in fuzzy mold. A new food technology hopes to solve this problem by extending the useful life of fruit. How? Through those annoying stickers you see on apples, pears, mangos and other fruits. The start-up company StixFresh has reformulated these stickers so they not only identify the fruit but contain compounds that help the fruit stay fresh. Fruit naturally produces chemical defense compounds in adverse environmental conditions. StixFresh stickers are doused with these compounds to help create a protective layer around fruit after it has been picked. The company claims that its stickers extend fruit's freshness by up to 2 weeks, citing independent studies that demonstrate how the stickers sustain the fruit's cellular structure, thereby retaining moisture and improving firmness. The stickers don't actually maintain the ripeness of picked fruit: they slow down the ripening process and therefore the fruit's eventual decay.
