About the balsamic reduction. To make balsamic reduction, simmer 1 cup balsamic vinegar in a sauce pot over medium heat until it thickens and reduces in volume by about half (to about 1/2 cup). You can add sliced garlic or herbs to flavor the reduction if you like. You can also buy balsamic reduction in some well stocked grocery stores.
