Ole Hickory Pits are pioneers in the world of high quality commercial BBQ equipment. This manufacturer started as a restaurant in Missouri. “To make a long story short, the third time the fire trucks came to put out the fire at the restaurant, it dawned on us that there should be a better way,” said David B. Most Ole Hickorys are gas fired, wood burning cookers. They make a couple smaller models, but specialize in high capacity systems for commercial use. They have some dealers who provide value added service, but much of their sales are direct to pros who just want the bottom line price. Ole Hickory shuns high tech add-ons like recipe presets and humidity control and prefers to keep it simple, although they do have thermostatic control that regulates their gas burners to provide consistent internal temps.
