Workman, 2010, 638 pages, paperback, many recipes, many color photos.

Beautifully photographed in color, this book won a Julia Child Cookbook Award. Raichlen’s most recent book, it is the best of his five barbecue books. He visits 60 countries and brings back recipes for everything from Spanish chocolate sandwiches to kangaroo.

He begins with the history of barbecue, and the last small chapter covers different grill types and how to use them. Discussion of concepts and technique are scattered throughout this huge book in the methods for individual recipes.
