Thick Enameled and Stainless Steel Bars Don’t Let Through Enough Radiant Heat

They Are Too Thick to Create Great Grill Flavor

As with cast iron, thick enameled and stainless steel grill grates retain and transmit a lot of heat, making big bold grill marks. But that’s not what we want. Yes, they are easy to clean and sturdy, but if they are dropped and crack, they can rust. Plus, the thick grates don’t allow maximum radiant heat to come up from the fire, and that’s really what we’re after when trying to create great grill flavor.
