These unusual “grills” are actually outdoor, gas powered ovens that are completely enclosed with no open flame. Holland’s claim to fame is the guarantee of no flare ups. The 20,000 BTU round cast iron burner has only an ON and OFF setting with no ability to adjust cooking temps.

People who own a Holland are usually nuts about it because, even though it takes a while to heat up, once they throw the meat on they can close the lid and take it easy. Holland cooks roasts, chicken, turkey and fish beautifully, but with no sear power, BBQ performance on steaks and burgers is lacking. Grates are stainless steel with an aluminum drip pan underneath. A wood chip drawer provides a whiff of smoke for this closed system. Two faux stone side shelves are included.

Since 1988 The Holland Grill Company has manufactured gas grills that guarantee no flare ups. Holland Grills will not flare up because the single cast iron burner that is either on or off with no temperature adjustment is completely enclosed and separated from the cooking grates by a heat distribution plate and an aluminum drip pan. They are outdoor ovens that do a great job roasting, but lack high temp searing capability. Although they have smokestacks, heat is predominantly radiant. Radiant cooking retains moisture in foods better than the hot air circulation of convection heat. Furthermore, since the cookbox is completely sealed, one can pour liquids onto the drip pan to steam foods.

Holland Grills take longer to heat up than other gas grills, have only one temperature for roasting and require a learning curve because of their unusual design. Nonetheless, those who master this cooking method love their Holland cookers and can't imagine going back to an open flame. Modern Home Products offers The Phoenix Grill, which has a similar closed cook box, but adds a variable temperature, dual control burner.
