Cheese Stuffed Bacon Wrapped Hot Dogs Will Be Your New Best Friend

Cheese. Bacon. Hot dogs. Could life get any better? Oh yeah – cook it all on the grill!

On July 4, 2018, extreme eater Joey Chestnut devoured a world record breaking 74 hot dogs in only 10 minutes during the annual Nathanโ€™s Famous Hot Dog Eating Contest.

While few individuals can come close to matching Chestnutโ€™s blistering pace, Americanโ€™s still consume an astonishing 7 billion frankfurters each summer according to the National Hot Dog and Sausage Council.

In his article โ€œHot Dog Road Trip,โ€ our very own Meathead explores the countless regional twists on the nationโ€™s favorite tubular treat, including Chicagoโ€™s francheesie. Stuffed with cheese then wrapped in bacon, the francheesie is traditionally deep fried until crisp but it is just as delicious–and possibly even more so–when cooked on the grill. Indirect heat keeps the bacon from incinerating on the grill.

Ingredients

  • 1 ounce cheddar cheese
  • 4 hot dogs
  • 4 strips bacon
  • 4 hot dog buns

Method

  • Prep.ย Cut the cheddar cheese into long, thin strips slightly shorter than the length of a hot dog.
  • Split the hot dogs lengthwise without cutting all of the way through to create a pocket for the cheese.
  • Stuff a strip of cheese into the pocket of each hot dog. Tightly wrap each hot dog with a strip of bacon, securing each end of the bacon with a toothpick.

  • Fire up.ย Prepare a grill for indirect cooking by placing a chimney full of pre-heated charcoal briquets on one side of the grillโ€™s charcoal grate in order to create direct and indirect cooking zones. Adjust the grill vents to bring the temperature to about 400ยฐF (204.4ยฐC) on the indirect side. Add 2 to 3 chunks of your favorite smoking wood to the charcoal for flavor. On a gas grill, adjust the temperature knobs so that one half of the grill is off and the other half is heated enough to maintain a temperature of approximately 400ยฐF (204.4ยฐC) on the indirect side.
  • Cook. Place the cheese stuffed, bacon wrapped hot dogs on the cool side of the grill with the cheese on top, positioning them as far from the heat source as possible. Cover the grill and allow the hot dogs to cook until the bacon is brown and crisp, approximately 20 minutes.

  • Serve.ย Place each cheese stuffed, bacon wrapped hot dog in a bun and serve immediately with your favorite hot dog condiments.
