Dessert Recipes

I've never been much good at baking. I have a fear of flour. Desserts spelled backwards is stressed. But there are some fun things you can do outdoors that will put a crown on a great meal.

Apple Cranberry Crisp in the Dutch Oven and Peach Blueberry Crisp on the Grill. These super easy fruit compotes with crispy crown will amaze all.

Nutella S'mores. These improved camping favorites get rid of the hard chocolate and substitute gooey nutty Nutella. And boy are they good!

Grilled Peaches Drowning In Rum With An Ice Cream Brain Freeze. Grilled fruit is a real treat, then add rum, butter, maple syrup, and ice cream and you get a real brain freeze.

Chocolate Truffles. The fastest way to a woman's heart is with chocolate. Actually, it works on me, too. And even though working with chocolate is tricky, nothing could be simpler to make than chocolate truffles. Just like the ones they serve at the fancy restaurants. Sooo simple and sooooo seductive.

Lou's All Purpose Foolproof Pie Dough. There are many recipes for pie dough and pie crusts, and serious bakers debate everything from the type of flour to the fat to the salt. Here's my wife's superb, easy, and foolproof recipe, good for sweet pies, pot pies, and even for wrapping pigs in a blanket.

The Science of Pie Thickeners. The bane of all pie bakers is soupy pie. So experienced bakers use some sort of a thickener to make it nice and firm. Here's what you need to know about the options.

All-American Apple Pie. Yes, you can make the All-American apple pie on the grill!

Irene Bouchard's Grape Pie. In Naples, New York, there is a local delicacy. Labor intensive, but worth it, Concord Grape Pie is a seasonal treat, and Irene Bouchard is the Queen of Concord Grape Pie.

Aunt Dee's Pecan Tassies (a.k.a. Crunch Cups). Pecan Tassies are mini bite size pecan pies, addictive little mouthfuls that are crunchy, nutty, gooey, flaky, and easy to pop one after another.
